Makes 2 glasses (serves 2)
1 cucumber, chopped
2 Granny Smith apples, chopped
2 sticks celery, chopped
1 lemon, peeled and segmented
handful mint leaves
2/3 handfuls curly kale (approx. 200g)
thumb-sized piece ginger, chopped
Chop the cucumber, apples and celery into small pieces, suitable for your juicer.
Place them along with the lemon segments, mint, kale and ginger into your juicer.
Serve chilled for a refreshingly zingy breakfast!
* Do not discard your pulp. It is a great source of fibre. Freeze it in batches and add to vegetarian stews or soups.
